Where I work three days a week, the people in my office always tease me because at least once every day one of my children will ask "What's for dinner". I am so glad that many years ago a friend shared with me the ideal of making a two week menu for dinners. It takes the stress of that question away. I know exactly what's for dinner on any given day. Tonight we had a quick and yummy favorite. Sausage and vegetable pasta. It all starts with Polish sausage sliced thin in a large skillet. Add to that any kind of vegetable you like and fry in the skillet with the sausage until the vegetables are cooked tender. Boil pasta until done and serve the fried sausage vegetable mixture over pasta with Parmesan cheese. We also like to add in green olives at the last few minutes of cooking.
Tonight everything I used came from Aldi except the pasta. If there is one thing I would like more of it is different types of pasta at Aldi. They have spaghetti, pene pasta, elbow macaroni, egg noodles and lasagna noodles. I would like a good bow-tie pasta. Sometimes they do have bow-tie, but I wish they would carry it on a regular basis.

I love sausage/veggie pasta, too. I haven't made it lately. Maybe this weekend. :)
